My mobile home has a manual HEAT/COOL switch separate from my thermostat. Can I use a Rite Temp thermostat?

Yes. Connect the two wires to RH and W and leave the thermostat in the HEAT position all the time. The thermostat becomes the on/off switch. If the thermostat control's seems backwards, re-connect the two wires to RC and Y and leave the thermostat in the COOL position all the time.
